Ingredients 

Chicken Marinade

  • 1 kg Chicken, cut into pieces
  • 2 tablespoon Coriander powder
  • 1 tablespoon Cumin powder
  • 1 tablespoon Fennel powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 4 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 stalks Lemongrass, minced
  • 1 cup Rice flour
  • 1 cup Cornstarch
  • 2 cups Oil for frying

Instructions 

  1. Mix all the marinade ingredients in a large bowl. Add the chicken pieces and coat them well. Let it marinate for at least 2 hours or overnight in the fridge.
  2. In another bowl, mix the rice flour and cornstarch. Dredge the marinated chicken pieces in the flour mixture.
  3. Heat the oil in a deep fryer or a large pot over medium heat. Fry the chicken pieces until golden brown and crispy, about 10-15 minutes. Drain on paper towels.
  4. Serve hot with your favorite dipping sauce.
