- 1 cup rice rinsed
- 8 cups water
- 2 pieces chicken breasts boneless, skinless
- 1 teaspoon salt
- 1 teaspoon ginger minced
- 2 tablespoons soy sauce
- 2 pieces green onions chopped
- 1 handful coriander leaves chopped
1. In a large pot, bring the water to a boil.
2. Add the rice and chicken breasts to the pot.
3. Reduce the heat to low and simmer for about 30 minutes, stirring occasionally.
4. Remove the chicken breasts, shred them, and return them to the pot.
5. Add salt, ginger, and soy sauce. Stir well.
6. Cook for another 10 minutes until the porridge thickens.
7. Serve hot, garnished with green onions and coriander leaves.
