Ingredients 

Main Ingredients

  • 2 lbs clams cleaned
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 lime juiced
  • 1 handful cilantro chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the curry powder and cook for another minute.
  4. Add the coconut milk, chicken broth, fish sauce, and sugar. Bring to a simmer.
  5. Add the clams, cover the pot, and cook until the clams open, about 5-7 minutes.
  6. Discard any clams that do not open. Stir in the lime juice and chopped cilantro.
  7. Serve hot with rice or crusty bread.
