Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 cup coconut milk
  • 1 large carrot diced
  • 1 large potato diced
  • 1 cup green beans cut into 1-inch pieces
  • 1 large tomato chopped
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 inch ginger minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon salt or to taste
  • 2 tablespoon vegetable oil

Instructions 

  1. 1. Rinse the lentils under cold water until the water runs clear.
  2. 2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
  3. 3. Add the curry powder, ground turmeric, and ground cumin. Stir well to combine.
  4. 4. Add the rinsed lentils and water to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
  5. 5. Add the diced carrot, potato, and green beans. Cook for another 10 minutes or until the vegetables are tender.
  6. 6. Stir in the chopped tomato and coconut milk. Let it simmer for another 5 minutes.
  7. 7. Season with salt to taste. Serve hot with rice or bread.
