Ingredients 

Main Ingredients

  • 1 kg Chicken, cut into pieces
  • 2 tablespoon Curry powder
  • 1 cup Coconut milk
  • 2 tablespoon Vegetable oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Ginger, minced 1-inch piece
  • 2 cups Water
  • to taste Salt
  • to taste Sugar
  • 1 Cinnamon stick
  • 2 Star anise

Instructions 

  1. Heat oil in a large pot over medium heat. Add chopped onions, minced garlic, and minced ginger. Sauté until fragrant.
  2. Add curry powder and stir for a minute.
  3. Add chicken pieces and cook until they are no longer pink.
  4. Pour in coconut milk and water. Add cinnamon stick and star anise. Bring to a boil.
  5. Reduce heat and let it simmer for about 30 minutes or until the chicken is cooked through.
  6. Season with salt and sugar to taste. Serve hot with rice.
