  • 1 cup Coconut milk
  • 2 Eggs
  • 2 tablespoon Sugar
  • ¼ teaspoon Salt
  • 1 tablespoon Butter melted

Instructions 

  1. In a mixing bowl, whisk together the flour, coconut milk, eggs, sugar, and salt until smooth.
  2. Heat a non-stick pan over medium heat and lightly grease with melted butter.
  3. Pour a small amount of batter into the pan, swirling to coat the bottom evenly.
  4. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute.
  5. Repeat with the remaining batter. Serve warm.
