Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 tablespoon Curry powder
  • 1 can Coconut milk
  • 4 cups Chicken broth
  • 200 g Rice noodles
  • 1 cup Shredded chicken
  • 1 cup Bean sprouts
  • 2 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • to taste Salt
  • to taste Pepper
  • for garnish Cilantro

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add curry powder and cook for another minute.
  4. Pour in coconut milk and chicken broth. Bring to a boil.
  5. Add rice noodles and cook until tender.
  6. Stir in shredded chicken, bean sprouts, fish sauce, and lime juice. Season with salt and pepper.
  7. Serve hot, garnished with cilantro.
