Instructions
Heat oil in a large pot over medium heat.
Add onion, garlic, and ginger. Sauté until fragrant.
Add curry powder and cook for another minute.
Pour in coconut milk and chicken broth. Bring to a boil.
Add rice noodles and cook until tender.
Stir in shredded chicken, bean sprouts, fish sauce, and lime juice. Season with salt and pepper.
Serve hot, garnished with cilantro.
