Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 2 tablespoon Curry paste
  • 1 cup Coconut milk
  • 2 cups Chicken broth
  • 1 tablespoon Fish sauce
  • 1 Lime, juiced
  • 200 g Chicken breast, sliced
  • 1 cup Bean sprouts
  • 1 Red chili, sliced
  • 1 Green onion, chopped
  • 1 handful Cilantro, chopped

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a large pot, heat the curry paste over medium heat until fragrant.
  3. 3. Add the coconut milk, chicken broth, and fish sauce. Bring to a simmer.
  4. 4. Add the chicken slices and cook until done, about 10 minutes.
  5. 5. Stir in the lime juice, bean sprouts, red chili, and green onion. Cook for another 2-3 minutes.
  6. 6. Serve the curry over the cooked rice noodles and garnish with cilantro.
