Ingredients 

Laksa Paste

  • 2 tablespoon vegetable oil
  • 1 cup shallots, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 stalks lemongrass, chopped
  • 2 tablespoon red curry paste

Soup Base

  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 200 g rice noodles

Toppings

  • 200 g cooked chicken, shredded
  • 100 g bean sprouts
  • 1 cup fresh cilantro, chopped
  • 1 lime lime wedges

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Add shallots, garlic, ginger, lemongrass, and red curry paste. Cook until fragrant.
  2. 2. Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  3. 3. Stir in coconut milk, fish sauce, and sugar. Simmer for another 10 minutes.
  4. 4. Cook rice noodles according to package instructions. Drain and set aside.
  5. 5. Divide noodles into bowls. Ladle soup over noodles and top with chicken, bean sprouts, cilantro, and lime wedges.
