Instructions
1. Heat oil in a large pot over medium heat. Add shallots, garlic, ginger, lemongrass, and red curry paste. Cook until fragrant.
2. Add chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
3. Stir in coconut milk, fish sauce, and sugar. Simmer for another 10 minutes.
4. Cook rice noodles according to package instructions. Drain and set aside.
5. Divide noodles into bowls. Ladle soup over noodles and top with chicken, bean sprouts, cilantro, and lime wedges.
