Ingredients

  • 500 g Pork shoulder, cubed
  • 2 tablespoon Vegetable oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Curry powder
  • 1 can Coconut milk
  • 1 cup Chicken broth
  • 2 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cups Potatoes, cubed
  • 1 cup Carrots, sliced

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Add the onions, garlic, and ginger. Cook until fragrant.
  2. 2. Add the pork and cook until browned on all sides.
  3. 3. Stir in the curry powder and cook for another minute.
  4. 4. Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Stir well.
  5. 5. Add the potatoes and carrots. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the vegetables are tender.
  6. 6. Season with salt and pepper to taste. Serve hot with rice.
