Ingredients 

Main Ingredients

  • 200 g Ramen noodles
  • 1 tablespoon Vegetable oil
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 4 cups Chicken broth
  • 1 tablespoon Soy sauce
  • 1 tablespoon Fish sauce
  • 200 g Chicken breast, sliced
  • 1 cup Bean sprouts
  • 2 stalks Green onions, chopped
  • 1 handful Cilantro, chopped
  • 1 lime Lime, cut into wedges

Instructions 

  1. 1. Cook the ramen noodles according to package instructions. Drain and set aside.
  2. 2. Heat the vegetable oil in a large pot over medium heat. Add the garlic and ginger, and sauté until fragrant.
  3. 3. Stir in the red curry paste and cook for another minute.
  4. 4. Pour in the coconut milk and chicken broth. Bring to a simmer.
  5. 5. Add the soy sauce, fish sauce, and sliced chicken breast. Cook until the chicken is fully cooked.
  6. 6. Divide the cooked ramen noodles into bowls. Ladle the soup over the noodles.
  7. 7. Top with bean sprouts, green onions, cilantro, and lime wedges. Serve hot.
