Ingredients 

Curry Ingredients

  • 2 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoon red curry paste
  • 400 ml coconut milk
  • 1 cup chicken broth
  • 2 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cups mixed vegetables (carrots, bell peppers, etc.), chopped
  • 500 g chicken breast, sliced
  • 1 handful fresh basil leaves

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and ginger, cook for another minute.
  4. Stir in the red curry paste and cook for 2 minutes.
  5. Pour in the coconut milk and chicken broth, bring to a simmer.
  6. Add the fish sauce and brown sugar, stir well.
  7. Add the mixed vegetables and chicken, cook until chicken is done.
  8. Garnish with fresh basil leaves before serving.
