Main Ingredients
- 2 tablespoon Vegetable Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 inch Ginger, minced
- 2 tablespoon Yellow Curry Powder
- 400 ml Coconut Milk
- 2 cups Vegetables (carrots, potatoes, bell peppers), chopped
- 1 teaspoon Salt
- 1 teaspoon Sugar
Heat the oil in a large pot over medium heat.
Add the chopped onion, garlic, and ginger. Sauté until fragrant.
Stir in the yellow curry powder and cook for another minute.
Add the coconut milk and bring to a simmer.
Add the chopped vegetables, salt, and sugar. Cook until the vegetables are tender.
Serve hot with rice or bread.
