Mee Rebus Ingredients
- 400 g Yellow noodles
- 200 g Sweet potatoes peeled and cubed
- 2 tablespoon Cooking oil
- 3 cloves Garlic minced
- 1 inch Ginger minced
- 2 tablespoon Soy sauce
- 1 cup Coconut milk
- 500 ml Water
- 1 tablespoon Tamarind paste
- 1 teaspoon Salt to taste
- 1 teaspoon Sugar to taste
- 2 pieces Hard-boiled eggs halved
- 1 cup Bean sprouts blanched
- 1 piece Lime cut into wedges
- 2 tablespoon Fried shallots
- 2 pieces Red chilies sliced
1. Cook the yellow noodles according to the package instructions. Drain and set aside.
2. Boil the sweet potatoes until tender. Drain and blend until smooth. Set aside.
3. Heat the oil in a large pot. Sauté the garlic and ginger until fragrant.
4. Add the blended sweet potatoes, soy sauce, coconut milk, and water. Stir well.
5. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
6. Add the tamarind paste, salt, and sugar. Adjust the seasoning to taste.
7. To serve, place the cooked noodles in bowls. Pour the gravy over the noodles.
8. Garnish with hard-boiled eggs, bean sprouts, lime wedges, fried shallots, and sliced red chilies.
