Nasi Air Dingin Recipe (Kelantan Cold Rice Salad)

Main Ingredients
- 2 cups Cooked rice
- 1 cup Cucumber, diced
- 1 cup Bean sprouts
- 1 cup Grated coconut lightly toasted
- 1 cup Herbs (mint, basil, cilantro) chopped
- 1 cup Fried shallots
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice
- 1 teaspoon Sugar
- 1 teaspoon Salt
1. Cook the rice and let it cool completely.
2. In a large mixing bowl, combine the cooled rice, cucumber, bean sprouts, grated coconut, and chopped herbs.
3. Add the fried shallots, fish sauce, lime juice, sugar, and salt. Mix well to combine.
4. Serve immediately or chill in the refrigerator for an hour before serving.
