Instructions
Heat the oil in a wok over medium heat.
Add garlic, lemongrass, and kaffir lime leaves. Stir-fry until fragrant.
Add the diced chicken and cook until no longer pink.
Add the mixed vegetables and stir-fry for 2-3 minutes.
Add the Tom Yam paste, soy sauce, fish sauce, sugar, salt, and black pepper. Stir well.
Add the cooked rice and stir-fry until everything is well combined and heated through.
Garnish with chopped cilantro before serving.
