Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 1 l Chicken broth
  • 1 Carrot, julienned
  • 1 Red bell pepper, sliced
  • 2 cloves Garlic, minced
  • 1 tablespoon Soy sauce
  • 1 teaspoon Ginger, grated
  • to taste Salt and pepper
  • 2 Green onions, chopped
  • 1 tablespoon Sesame oil

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. 3. Add the chicken broth, carrot, and red bell pepper. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. 4. Stir in the soy sauce, cooked rice noodles, and green onions. Season with salt and pepper to taste. Simmer for another 5 minutes.
  5. 5. Serve hot and enjoy!
