Sambal Eggplant Recipe

- 2 large eggplants cut into bite-sized pieces
- 3 tablespoon vegetable oil
- 1 cup sambal oelek
- 2 cloves garlic minced
- 1 tablespoon soy sauce
- 1 teaspoon sugar
Heat the oil in a wok over medium heat.
Add the garlic and sauté until fragrant.
Add the eggplant and cook until tender.
Stir in the sambal oelek, soy sauce, and sugar. Cook for another 5 minutes.
Serve hot.
