Main Ingredients
- 1 whole Free-range chicken cut into pieces
- 2 liters Water
- 2 inches Ginger sliced
- 4 cloves Garlic crushed
- 2 sticks Lemongrass bruised
- 3 pieces Kaffir lime leaves
- 1 teaspoon Turmeric powder
- 1 teaspoon Coriander powder
- 1 teaspoon Cumin powder
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 tablespoons Cooking oil
Heat the oil in a large pot over medium heat.
Add the ginger, garlic, and lemongrass. Sauté until fragrant.
Add the chicken pieces and cook until they are lightly browned.
Pour in the water and bring to a boil.
Add the kaffir lime leaves, turmeric powder, coriander powder, and cumin powder.
Reduce the heat and let it simmer for about 45 minutes, or until the chicken is tender.
Season with salt and black pepper to taste.
Serve hot with rice or bread.
