Main Ingredients
- 3 cups Cooked rice preferably day-old
- 2 tablespoon Vegetable oil
- 2 Garlic cloves, minced
- 1 Onion, chopped
- 1 cup Mixed vegetables carrots, peas, corn
- 2 Eggs, beaten
- 3 tablespoon Soy sauce
- 1 teaspoon Sesame oil
- to taste Salt and pepper
- 2 Green onions, chopped for garnish
Heat the vegetable oil in a wok over medium-high heat.
Add the minced garlic and chopped onion, and stir-fry until fragrant.
Add the mixed vegetables and cook for 2-3 minutes.
Push the vegetables to the side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
Add the cooked rice to the wok and stir everything together.
Pour in the soy sauce and sesame oil, and mix well. Season with salt and pepper to taste.
Garnish with chopped green onions before serving.
